Virgin Piña Colada

You can drink this in the morning as a smoothie or consider it more of a virgin cocktail. Or for that matter, hit it with some rum and you’ve got a much healthier version of the classic tropical drink.

Produce

  • 1” piece ginger

Pantry

  • 1 teaspoon ground turmeric
  • 2 big juicy Medjoul dates
  • ¾ cup coconut yogurt, plus more (preferably Harmless Harvest)
  • 12 ounces coconut water (preferably Harmless Harvest)
  • Kosher salt

Frozen

  • 1 heaping cup frozen pineapple
  • 1 heaping cup frozen mango

1. Blend:

  • Combine all ingredients except for the coconut water in a blender along with a handful of ice cubes. Start by adding about 1 cup of coconut water, and blend on high; if the mixture is too thick, continue to add more coconut water until it starts to loosen up enough to blend until creamy. Season with salt to taste.

2. Serve:

  • Spoon and spread some more coconut yogurt inside the walls of 2 glasses. Pour the pina into the glass and serve garnished with whatever you like!!
