I got the idea for this scampi after an epic meal at Mr Chow, during which I plowed through all the greatest hits. Their famed green prawns got me thinking…. Why aren’t more shrimp served cloaked in herby green sauce? And to that end, what if I were to create a garlicky green scampi? This dish is the result. The green sauce is almost too good for words, so if this looks strange to you and you’re reluctant at all, pleaseee try it. It’s bright, herby, spicy, and smooth. You’ll also learn to very gently poach your shrimp vs. searing them over high heat, which is a great way to ensure tender supple shrimp that are NOT overcooked.
