If you’ve ever wondered what might happen if you forgot to add most of the flour to your chocolate chip cookie dough, THIS IS IT. Introducing: Forgotten Flour cookies, the result of a very happy accident and the latest greatest cookie to enter the CCC discourse.
Instead of scooping out individual balls of dough like you usually would, you’ll spread all of the dough into a sheet pan in a single layer (the lower ratio of flour makes it highly malleable) and bake it off as one single crispy all-over and yet somehow still bendy-in-the-middle large-format chocolate chip cookie. The addition of toffee bits gives them an extra sticky-icky, tacky texture, and what was once a mistake has now invented a whole new category of cookie. One that will NEVER ask you to choose between crispy and chewy again.
Cook’s Note: A long offset spatula will be your best friend here, allowing you to evenly distribute the cookie dough to all edges of the pan. If you don’t have one, it’s a great time to invest; they’re great for cakes and cookies of all kinds. I love this one!
